One Pot Rigatoni Caprese!

So as you guys know, I'm not a great cook. I knew that it was time to start cooking homemade meals because I was seriously tired of ramen, macaroni and cheese, and frozen dinners. I'd made pastas with jarred sauces and I've sauteed veggies, but I hadn't really made a homemade meal before.

I knew that, since I work full time, I had to make something quick, and since I've recently moved into my house and we're not fully stocked on food yet, it had to be something that didn't require too many ingredients. I went through all of my Pinterest boards and kept looking. I stumbled upon this one-pot pasta caprese recipe by Yellow Bliss Road, and I instantly knew that I wanted to make it. Alas, I did make it, and it actually came out really good! Even my hubs liked it, and he can be a picky eater!




This is what you're going to need:

  • 12" pot
  • Cutting board
  • Sharp knife
Now, I've changed up some of the ingredients, so my recipe differs a bit from the recipe over at Yellow Bliss Road. So keep reading and do so carefully! :)

These are the ingredients you'll need:
  • ½ cup diced onion
  • 2 tablespoons olive oil
  • 1 pound pasta (uncooked)
  • One package grape tomatoes, sliced in halves
  • 5 fresh, whole basil leaves
  • 1 tablespoon minced garlic
  • 1 cup chicken broth (or vegetable broth if you want a vegetarian dish)
  • 1½ cups water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ cup grated Parmesan cheese
  • Fresh, cubed mozzarella, to taste
  • Balsamic vinegar (enough to drizzle)
  • Chopped basil leaves for garnish

Instructions; they are so easy!
  1. Preheat a 12" pot with the olive oil. Add diced onions and cook until they're soft.
  2. Add uncooked pasta, HALF the package of the sliced grape tomatoes (save the other half for later), fresh whole basil leaves, minced garlic, water, chicken broth, grated cheese, and salt and pepper. Stir together and combine.
  3. Bring mixture to a boil in the pot. Continue to cook over medium heat, stirring often, until pasta is cooked and the liquid is reduced. This will take about 15 minutes.
  4. Lower the flame. Removed the five fresh whole basil leaves.
  5. Top with the remaining grape tomatoes and mozzarella cheese evenly. Cover pot and let sit until cheese is melted. 
  6. Turn off heat. Drizzle with balsamic vinegar and garnish with chopped basil leaves. Serve hot!

This is a perfect, easy dish for the working woman (or man)! It's full of flavor and simply different than many other dishes. Surprise your significant other with a beautiful, tasteful dish that he or she will have no choice but to love.
